The best Gf and Sf Pancakes Hands Down!

So, I know it's hard to find a light fluffy pancake recipe that suits your dietary needs; and I'm not going to lie and say that this recipe is light and fluffy, It's not!
However I do think that it comes pretty close, (as far as Gf and Sf pancakes go.)
This recipe is made with rice flour and coconut flour(optional) 
I usually don't use coconut flour but without it the batter would be thin and you would have cracker thin pancakes.
I just added it in to thicken up the batter.
It's good for you to know your rice flours; the first version I used was grainy an it did ok, I guess.
The second version I used (in this recipe) was a fine rice flour and it was amazing, so the texture of your flours with reflect on your flour thickness.


On my pancakes I put some Agave and it was amazing, but you could also use honey, sf syrup ,or fruit.
But the combo of agave and pancake was amazing!
Let's get into this recipe!!!!;)

Ingredients:
1 c. Rice flour
1/4 c. Coconut flour (optional)
1 lightly beaten egg
1 c. Milk(you can use a dairy free milk if you want)
2 tsp baking powder
2 tsp oil (I used sun flour)
1/2 tsp salt

Directions:
In bowl mix your dry ingredients thoroughly, then add the wet ingredients and mix until combined.
Use a 1/4 measuring cup and measure batter 1/4 c at a time into a greased skillet on medium heat.
You may be able to fit up to 3 at a time.
When they get dry on top flip them after 10-15 secs.
Put on a plate and enjoy.

Yields:12
Serving size: 1/4 cup of batter
